Hey there, fabulous foodie friends! If your kitchen often feels like both a bakery and a science lab, you’re in the right spot. Today, we’re whipping up a treat that’s as delightful to craft as it is to devour—our Allergy-Friendly Cookie Pudding Pie. It’s free from dairy, soy, nuts, eggs, and gluten! Before we dive into the gooey goodness, let’s take a moment to share our personal journey into the world of allergy-friendly cooking.

Our Allergy Adventure

Our path to allergy-aware cooking began in 2018 when my then toddler son had his first reaction to peanuts after eating a PB&J sandwich. It was a frightening moment that thrust us into the world of food allergies. Since then, we’ve been learning and adapting, discovering safe and delicious ways to enjoy food.

Fast forward to Summer 2023, we faced new challenges as my son began experiencing symptoms like headaches, constant runny nose, upset tummy, and he even started to complain about his chest. This sent us back to the allergist where we got the not so good news. We had to broaden our allergy-friendly recipe repertoire. This Cookie Pudding Pie is more than just a dessert—it’s a symbol of our journey, filled with love, creativity, and a dash of kitchen science.

Navigating the Allergy-Friendly Kitchen

Creating recipes that cater to food allergies doesn’t have to be a daunting task. Here are a few sweet tips to make your kitchen a safe haven for all:

  • Read Labels Religiously: Ingredients can change, so even if it was safe last month, double-check to keep surprises off the menu.
  • Prevent Cross-Contamination: Have separate utensils and bowls for allergen-free cooking, or always wash them thoroughly before use.
  • Simple Swaps: Discover the joy of substitutions! Oat milk can moonlight beautifully in place of cow’s milk, and there are myriad gluten-free flours waiting to rise to the occasion.
  • Communicate: Whether you’re hosting a playdate or a family dinner, clear communication about dietary needs sets everyone up for a deliciously good time.

With these tips in hand, you’re ready to dive into making our family-favorite dessert. So, let’s put on our aprons and bring a little magic to our kitchen counters!

The Recipe: Cookie Pudding Pie

Ingredients You’ll Need:

  • One big box of Vanilla instant pudding
  • One big box of Chocolate instant pudding
  • Chobani Extra Creamy Oat Milk (It hugs your tastebuds, seriously!)
  • Sweet Loren’s Cookie Dough (Fudgy Brownie and Chocolate Chip varieties)
    • Or, use their store locator here
  • A regular-sized glass pie pan (This is the one we use)
  • Essential gear: Mixing bowls, cookie sheets, and rubber spatulas

Instructions to Sweet Success:

  1. Pudding Prep:
    • Start with each flavor of pudding separately, mixing with a bit less oat milk than the box suggests for a rich, creamy texture.
    • Chill in the fridge to set just right—think “nap time” for your pudding!
  2. Bake the Cookies:
    • While the pudding rests, bake those cookies as directed. Let them cool just enough so you don’t singe your fingertips.
    • If you don’t have Sweet Lorens, use 2 different kinds of your family’s favorite cookie dough. Just be sure to have about a dozen of each flavor.
  3. Layering Magic:
    • Crumble the Fudgy Brownie cookies into the pie pan to form your crust. Once they are all crumbled, press them down. This is a great time for little hands to help!
  4. The Art of Pudding Layering:
    • Channel your inner Picasso and layer those puddings in the pan. Swirl, stripe, or go wild! My son prefers a striped design so each slice has both flavors of pudding.
  5. Top It Off:
    • Sprinkle the chocolate chip cookie crumbles on top like you’re dusting the first snow of winter—lightly and with glee!
  6. Chill and Serve:
    • Give your pie a little chill time in the fridge, or if your taste testers are clamoring at the counter, dive right in!

Seasonal Twists and Fun Facts

This pie is a chameleon of desserts—adaptable to any season or reason:

  • Spring: Think Berry Medley pudding with lemon zest cookies.
  • Summer: How about a Coconut Cream pudding with key lime cookies for a tropical twist?
  • Autumn: Pumpkin Spice pudding with gingerbread cookies could be your next Thanksgiving hit.
  • Winter: Peppermint pudding with double chocolate cookies makes every snow day a celebration.
  • You can even serve it in cute little cups for a fun twist!

And while you’re mixing and matching, you’re sneakily teaching the kids about science—measuring, reactions, and even a bit about culinary arts!
